CAULIFLOWER CORN PUREE

The post today is all about the side dish that goes along with the best salmon ever. If you don’t know, copper river salmon comes from the Copper River in Alaska and once you’ve tried it you will never eat salmon the same way. Copper river salmon is known for its high oil content (omega-3) beautiful color and juicy rich flavor. Here is another post about this delicious fish. Usually we grill this salmon, but we were very busy that day and Marilyn decided to pan-sear it. It was delicious!! The skin was crispy and I loved the way the fat melted making the filet even better. To serve with the copper river salmon we made a cauliflower corn puree that was so amazing I was eating it with a spoon while Marilyn finished cooking. It was the best side dish to go along with the salmon. You can even serve the cauliflower corn puree with different types of meat. I can’t forget to mention that roasting the veggies made the whole difference, especially in summer when you can grill outside experimenting new ways to cook and flavor combinations.

CAULIFLOWER CORN PUREE

CAULIFLOWER CORN PUREEΒ 

Ingredients

5 c. cauliflower florets
2 c. fresh corn kernels
2 tsp. minced garlic
1 1/2 c. whole milk
5-6 T. butter
1-2 c. shredded Parmesan
kosher salt and pepper
olive oil

CAULIFLOWER CORN PUREE

Directions
Preheat oven to 350F.
Place cauliflower florets and corn kernels on a sheet pan. Drizzle with olive oil and season with kosher salt and pepper, Roast until cauliflower is easily pierced with a knife and corn is softened.

Place into a Cuisinart and pulse into small pieces. With motor running, add milk and butter, 1 T. at a time. Add Parmesan (to taste) and continue processing. Mixture should be smooth and creamy. Season with salt and pepper.

CAULIFLOWER CORN PUREE

We added to the dish a watercress avocado salad and the red sauce on top of the puree is Harissa sauce.

    Thanks for your recipe. I noticed that in the ingredients, you list minced garlic but it does not appear in the directions….
    Input the garlic in but must admit the raw garlic overpowers the delicate flavours of the corn and cauliflower. I would leave it out or reduce completely.
    Otherwise delicious!

Brazi Bites JalapeΓ±o Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. JalapeΓ±os

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeΓ±os and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeΓ±os and small dice.

In a medium bowl mix diced jalapeΓ±os, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeΓ±o mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
