When I first moved to the U.S I was surprised with everything of course, but I was very shocked with the large food portions, the drink sizes, the free refills and what I am about to say right now is going to sound funny but it’s the truth… to go boxes or what some people call doggy bags ! lol After my initial enthusiasm with the” food wonderland” country I was in, I wasn’t enthusiastic with all the weight I gained. I remember when I moved to Paris after living here for several months, that I used to compare the French portions with the meals served in this country and I was leaving the restaurant hungry. So, when I moved back to U.S I had been used to the French lifestyle which meant small portions. Slowly, I’ve been losing weight, eating cleaner, in smaller portions and being strict about my food intake. We eat at home most of the time and we really enjoy it! Our days off are all about creating and that doesn’t mean fancy… not at all! After I made that candied bacon (here) I decided to give it a new flair with the combination of bacon wrapped dates stuffed with goat cheese. This time I wrapped the candied bacon on fresh fruits: kiwi, mango, pineapple and pear. My favorite was with the kiwi. We served this for our guests the other day and it was a hit the mix with of the sweetness of the candied bacon and the grilled fruits.
There’s no secret to this recipe. Wrap the regular or candied bacon in the fruit and bake it until the bacon is golden brown.
