I have changed my palate not only regarding food but drinks too. I remember when I lived in Brazil I used to be a big beer drinker. Don’t get me wrong, I still love my ice cold beer especially in the summer, but beer make me feel heavy and tired these days. My palate has been changing as a result of living in different countries and also because of the cold weather. I love my red wine anytime during the 8 months here in Seattle with cold, rain and gray skies, but I am discovering more and more that I am becoming a big fan of champagne and sparkling wine. Champagne for me has always been associated with big accomplishments and celebrations. Think about champagne or sparkling wine and where you see them the most… New Years, weddings, job promotions, honeymoons, Valentine’s Day… it’s always related to big and happy events don’t you think?? A couple of weeks ago with our cheese experiments here and here we had a rosé champagne. It was amazing! Every time that I have bubbles I feel in a different state of mind, the state of celebration!! After that day, I started searching and was willing to try more and more… Unfortunately, the prices are not very friendly but it’s worth it to spend extra money on these happy bubbles.
