Lately our days off have been Mondays and Tuesdays and every Monday all over social media there are posts talking about detox, green juices, something light to “recover” after the weekend. Also, every Friday I “die” seeing all the photos regarding brunch and I love brunch food. I will be honest to you that I can’t wait to work Monday – Friday and have Saturdays and Sundays off. It just feels right to me!! lol So, for those that have days off on the weekdays here is a well deserved breakfast that we made with bread from a local bakery (Macrina),where Marilyn works, with leftovers of the delicious brisket, over easy fried eggs, avocado and sauce (the same that we used for the brisket recipe). I can’t describe how delicious this combination is!!! It just amazing!!

2 slices of smoked brisket (recipe)
1 bread (we used onion Bialys from Macrina Bakery)
North Carolina Vinegar Sauce (recipe)
To put it all together place the brisket and the eggs on an half, avocado, sauce and top it off with the another half and enjoy.
