BRIGADEIRO S’MORES

S’mores are such an American summer dessert but I’d never heard of them before I moved here. It’s a such fun dessert to put together as well to enjoy. My first experience with s’mores was with everything made from a package: marshmallows, crackers and of course the chocolate. It wasn’t my favorite dessert at all! It was too sweet! Marilyn, told me that I should Β give it one more chance and she would make everything homemade.Β I love homemade versions of classic packaged foods. For example, a homemade macaroni and cheese is always a delight. Let’s start with the graham crackers. I could eat them with black coffee everyday! They are buttery and full of honey and vanilla and have just the right texture and crispiness. The marshmallows are super fluffy and not too sweet. The chocolate….We gave a Brazilian flair to this classic American dessert. We made brigadeiro, the Brazilian truffle, that’s is decadent and perfect to go along with the s’mores. We used brigadiero instead a chocolate bar for the filling and it was amazing!!

BRAZILIAN FLAIR S’MORES
 
Ingredients
  • For the graham crackers
  • 1½ c. all purpose flour
  • 1⅓ c. graham flour
  • 1 tsp. baking soda
  • ½ tsp. kosher salt
  • 1 c. unsalted butter, room temperature
  • ⅔ c. dark brown sugar
  • 4 T. honey
  • For the marshmallows
  • For the gelatin
  • 3 T, unflavored gelatin
  • 1½ T vanilla extract
  • ½ c. cold water
  • For the marshmallows
  • ¾ c. water
  • 1¼ c. light corn syrup
  • 1½ c. bakers sugar
  • salt
  • For the coating
  • 1½ c. powdered sugar
  • ½ c. potato starch
  • Recipe Brigadeiro
Instructions
  1. For the graham crackers
  2. In a medium bowl whisk together both flours, soda and salt. Set aside.
  3. In a kitchenaid mixer combine butter, brown sugar and honey and beat on medium high until light and fluffy, scraping down the sides of the bowl as you go. Add the flour mixture and combine on low just until the dough comes together.
  4. Transfer dough onto a piece of plastic wrap, press into a square and wrap tightly. Refrigerate for at
  5. least 2 hours. When ready to roll, pull out and let sit at room temperature for 1 hour.
  6. On a lightly floured surface roll dough to ⅛ in. thickness and cut into squares of your desired size. We used 4x4 squares. Place on a baking sheet lined with parchment and poke holes into the crackers with the prongs of a fork. Bake at 350F for 10 minutes, then rotate the sheet and bake another 6 minutes until golden brown. Cool on the pan for 10 minutes then transfer to a rack to continue cooling for at least 30 minutes.
  7. Directions for the marshmallows
  8. Spray a 9x13 baking pan with cooking spray and set aside.
  9. Measure the gelatin into the bowl of a kitchenaid mixer. Combine vanilla and ½ c. cold water and pour over the gelatin. Mix gently until until mixture has the consistency of applesauce with no lumps. Set aside.
  10. Pour ¾ c. water into a medium saucepan. Pour sugar, syrup and salt on top. Over medium high heat bring mixture to a rapid boil, occasionally wiping the sides down with a damp pastry brush to prevent crystallized sugar pieces to fall into the mix. Do not stir once the mixture has come to a boil.
  11. Continue boiling until mixture comes to 247F-250F (a candy thermometer is a great measure for this)
  12. Remove from heat.
  13. With the mixer on medium speed, carefully pour the hot sugar syrup down the side of the bowl into the gelatin mix. Cover the bowl with a kitchen towel and increase the speed to high.
  14. Whip for about 10 minutes until the mixture resembles soft serve ice cream.
  15. Transfer to baking pan immediately. Let the marshmallows sit for at least 8-10 hours, preferably 24 hours.
  16. When ready to cut, mix together powdered sugar and potato starch in a large bowl. Spread some of this mixture onto the top of the marshmallows and smooth with your hand. Flip the marshmallows out onto a work surface. Using a sharp knife cut the marshmallows into squares. Toss each square with the powdered sugar mix until evenly coated.
  17. Store in an airtight container at room temperature for up to 3 weeks. Coating may be stored separately for the same amount of time.

Brazi Bites JalapeΓ±o Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. JalapeΓ±os

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeΓ±os and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeΓ±os and small dice.

In a medium bowl mix diced jalapeΓ±os, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeΓ±o mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
