BRIGADEIRO HALLOWEEN CUPCAKES

There are so many reasons to make and serve these Brigadeiro Halloween cupcakes. The cupcakes themselves are so flavorful and moist and were made with chocolate and pumpkin. The spooky decorations are perfect and easy to do with the kids.

I love Halloween so much and I am so glad that I live in a country that celebrates it. I wish we had it in Brazil when I was growing up because it’s a such perfect holiday for kids. Nowadays, there are a lot of Halloween parties in Brazil.  I went to Brazil last May and I brought two luggage full of Halloween  party decorations for my nephew’s 4th birthday. They had the party at the beginning of the month and they said that the kids went crazy over the decorations, costumes and food.

We’ve  never done any Halloween food for the blog and this year we decided to do it  for our Brazilian readers. We found this delicious recipe at Sally’s Baking Addiction, and it is super delicious as well as low calorie!!  WIN!!  I have to tell you that it took more time than we planned. Marilyn and I are not bakers and we don’t have any talent with pastry decorations either. Thanks to Mark who helped us with this project, it wasn’t hard actually to make these cupcakes.  With a little patience it’s a fun and delicious activity to do with the kids!

BRIGADEIRO HALLOWEEN CUPCAKES
 
Ingredients
  • Cupcakes
  • ¾ cup (185g) pumpkin puree (fresh or canned)
  • ½ cup (100g) packed light brown sugar
  • ¼ cup (82g) pure maple syrup
  • 2 large egg whites
  • ⅔ cup (160g) nonfat Greek yogurt1
  • 2 Tablespoons (30ml) coconut oil, melted
  • 1 teaspoons vanilla extract
  • ½ cup (62g) all-purpose flour (measured correctly)
  • ½ cup (66g) whole wheat flour
  • ½ cup (42g) unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 and ½ teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • Brigadeiro
  • Here recipe brigadeiro
  • Decoration
  • 5 milanos crackers
  • 5 oreos
  • M&Ms
  • Sparkling gel black, green and orange
Instructions
  1. Preheat oven to 425F degrees.
  2. Spray 12-count muffin pan with nonstick spray. If using cupcake liners, spray those lightly with nonstick spray. Set aside.
  3. In a large bowl, combine pumpkin, brown sugar, maple syrup, egg whites, greek yogurt, oil, and vanilla extract.
  4. Whisk them all together until smooth, with no yogurt lumps remaining.
  5. Sift the flours, cocoa powder, salt, baking soda, baking powder, cinnamon, and pumpkin pie spice together into a large bowl.
  6. Slowly stir in the wet ingredients, being careful not to overmix.
  7. Get any dry pockets of flour out.
  8. The batter will be a little chunky and extremely, extremely thick.
  9. Divide the batter evenly among the muffin cups - fill them all the way to the top if you can.
  10. Bake for 5 minutes at 425F.
  11. Keeping the muffins in the oven, reduce the temperature down to 375 and continue to bake for 13 more minutes. Insert a toothpick into the center of one muffin.
  12. If it comes out clean, they are done. If not, bake for only 2 more minutes.
  13. Remove from the oven and allow to cool for 3 minutes in the pan, then transfer to a wire rack to cool completely.
  14. Spread the brigadeiro over the cupcakes.
  15. While the cupcakes are baking and cooling, begin separating the Oreos.
  16. I warmed the Oreos on a pan in the oven for 10 -15 seconds (test first how works for you) and gently slid one cookie off (don’t pull it off or it will bring some of the white with it).
  17. Next, dab a brown M&Ms and place slightly off-centered on the white of the Oreo.
  18. These are the eyes.
  19. Make “ears” for the owl.
  20. Break the Oreo without the frosting in half and stick in the cupcakes.
  21. To make the nose stick in one orange M&M.

While I was reading this article in the  NYT “Transforming Insects Into A Luxury (Candy) it came to mind the last time we were in Brazil.   We went to D.O.M.,  rated the best restaurant in Brazil, Michelin stars, by Alex Atala.  While we were there we ate Amazonia ants. They were naturally dried and the gold color is because they eat just greens. When the server gave them to us I ate them but I barely tasted them because I was grossed out by them. The little leg stuck in my throat… lol. But it was worth the experience!!!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
