BRAZILIAN SHRIMP ON PINEAPPLE GRATIN

Marilyn loves Brazilian food! She never had it until she met me. Since then little by little I have been cooking different types of Brazilian food for her. The other day I made this typical dish served in restaurants by the beaches in Brazil: shrimp on pineapple gratin. In Brazil this dish is served with farofa and kale.  If you’ve  never had Brazilian food before I can tell you it is not spicy (unless you are in certain parts of Brazil)  It is a very easy and delicious summer meal.

BRAZILIAN SHRIMP ON PINEAPPLE GRATIN

Ingredients

1/2 pound shrimp

1/4 red bell pepper (diced)

1/4 yellow bell pepper (diced)

mashed garlic

1 onion diced (small)

1 can creme de leite

1 can of coconut milk

shredded coconut

1 pinch pepper

50 ml white wine

grated coconut

2 tablespoons cornstarch dissolved in water

cream cheese

Preparation:

Cut the pineapple in half vertically. Remove the fruit, cut into small cubes and set aside. Do not take the crown off.

BRAZILIAN SHRIMP ON PINEAPPLE GRATIN

Sauté garlic in olive oil until in becomes golden. Add the onions and peppers and sauté.  Add the shrimp. Cook for 2 minutes. Add the wine and reduce.

Add the diced pineapple, coconut milk and cornstarch.

Let thicken. Rectify the salt and add the creme de leite.

Place the pineapple in the oven while preparing the shrimp cream. Remove from the oven and add the cream cheese on bottom.

BRAZILIAN SHRIMP ON PINEAPPLE GRATIN

Add  the cream of shrimp, sprinkle Parmesan cheese and grated coconut.

BRAZILIAN SHRIMP ON PINEAPPLE GRATIN

Place in the oven and cook until golden brown. Serve the shrimp cream into the pineapple with rice. Add prawns on top for decoration.

    I have questions. You put the pineapple in the oven? what temperature? How about the cream cheese? Does the cream cheese is added to the sauce or you just place inside the pineapple with the cooked rice? Looks amazing though.

    • Yes! We put the pineapple in the oven for 10 minutes at 350F. We just put the cream cheese in the bottom of the pineapple and put the rest of the ingredients on top!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
