BRAZILIAN FLAIR ONION RINGS STUFFED WITH CHEESE

Brazilian flair onion rings stuffed with cheese have a very crispy layer on the outside and the inside is very gooey and soft. We served it with a Malagueta pepper aioli that made this delicious appetizer even more flavorful.

We almost never have fried food at our house, but sometimes the craving just “hits” and you to have some extra crunchy food to have with a cold beer, especially during the summer. Do you feel the same? So, we decided to make these onion rings with panko to give the perfect crispiness to it. You will see some onion ring recipes using bread crumbs but after we tested it we noticed a huge difference regarding the crispiness using panko. We stuffed them with mozzarella cheese and served them with the perfect aioli made with Brazilian Malagueta peppers. You can buy these peppers online. They’re delicious!! You can also use a your favorite pepper to make this aioli. Enjoy it!!

Summer calls for rosé wines!! We love them and we drink them the whole summer until we start missing red again…lol Here is an interesting article “A Rosé Wine Primer for Beginners, Experts and Weirdos“.

BRAZILIAN FLAIR ONION RINGS STUFFED WITH CHEESE
 
Ingredients
  • 2 large white or yellow onions
  • 4 slices mozzarella cheese
  • 6 eggs
  • 2 cups of flour mixed with 1 tsp salt and 1tsp dry oregano
  • 6 cups panko
  • Oil
  • Malagueta Aioli
  • juice of 1 lime
  • 1 tsp. shallots, minced
  • ½ tsp. garlic, minced
  • 10 Malagueta pimenta, minced
  • 5 oz. Mayonnaise
Instructions
  1. Peel and cut onions into 1-centimeter rings.
  2. Separate all rings.
  3. Slice the mozzarella into strips.
  4. Take 1 large ring and one smaller ring and set inside..
  5. Try to match up were there’s a enough gap between them.
  6. Take cheese and start stuffing around the sides.
  7. Repeat with remaining onion rings and freeze them for 1 hour.
  8. Place the flour, beaten eggs, and panko into three separate bowls.
  9. Coat each onion ring into the flour, then the egg, then the panko, then repeat again into the egg, and one last time into the panko.
  10. Repeat with the remaining onion rings.
  11. Heat the oil in a pot over high heat.
  12. Deep fry the rings until golden brown.
  13. Don't fry the onion rings for too long as the cheese may come out completely.
  14. Drain on a paper towel.
  15. Malagueta Aioli
  16. Put the mayonnaise in a bowl. Set aside.
  17. In a pan saute shallots and garlic with the malagueta peppers.
  18. Add the lime juice.
  19. Let cook for 1 minute.
  20. Add this mixture to the mayonnaise.
  21. Mix everything.
  22. Ajuste to your taste.

Ingredients
  • 2 cebolas grandes brancas ou amarelas
  • 4 fatias de queijo muçarela
  • 6 ovos
  • 2 xícaras de farinha misturada com 1 colher de chá de sal e 1 colher de chá de orégano seco
  • 6 xícaras de Panko
  • Óleo
  • MOLHO AIOLI DE MALAGUETA
  • Suco de 1 limão
  • 1 colher de chá de chalotas, picadas
  • ½ colher de chá de alho, picado
  • 10 pimentas malagueta, picadas
  • 140g de maionese

Instructions
  1. Descasque e corte as cebolas em rodelas de 1 cm.
  2. Separe todos os anéis.
  3. Corte a muçarela em tiras.
  4. Coloque 1 anel pequeno dentro de 1 anel maior.
  5. Tente deixar uma folga suficiente entre eles.
  6. Peque queijo e comece a encher em torno dos lados.
  7. Repita com o restante dos anéis de cebola e congele-os por 1 hora.
  8. Coloque a farinha, ovos batidos e panko em três tigelas separadas.
  9. Cubra cada anel de cebola na farinha, em seguida, o ovo, em seguida, o panko, em seguida, repita novamente no ovo, e uma última vez no panko.
  10. Repita com os restantes anéis de cebola.
  11. Aqueça o óleo em uma panela em fogo alto.
  12. Frite os anéis até dourar.
  13. Não frite os anéis de cebola por muito tempo porque o queijo pode sair completamente.
  14. Escorra em papel toalha.
  15. MOLHO AIOLI DE MALAGUETA
  16. Coloque a maionese em uma tigela. Reserve.
  17. Em uma panela refogue as chalotas e o alho com as pimentas malaguetas.
  18. Adicione o suco de limão.
  19. Deixe cozinhar por 1 minuto.
  20. Adicione esta mistura à maionese.
  21. Misture tudo.
  22. Ajuste ao seu gosto.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
