BRAZILIAN FLAIR DULCE DE LECHE PUMPKIN BUNDT CAKE SHOT

Brazilian flair Dulce de leche pumpkin cake shot combines the two best desserts, pumpkin cake and warm dulce de leche!!! Fill you house with the smell of fall and bake this bundt cake!!!

I absolutely love fall foods and can’t get enough of all the pumpkin foods so prevalent this time of year. The cake itself is delicious. I love that dulce de leche filling and if you love pumpkin then this cake will surely satisfy your pumpkin craving. I love the spices in it!

This pumpkin bundt cake shot is the result of an attempt to make a muffin stuffed with dulce de leche in the middle.My plan was to have enough dulce de leche in the middle so I could see it  and taste it once I cut the muffin open. Marilyn gave me the idea to make these in a bundt cake pan and I loved it because I love the shape of this pan. So, we made it and when I cut it in the middle there was no dulce de leche in the middle (lol !!), It had dispersed and melted into the muffin which made it more moist, which was delicious. but not what we wanted.  So, I had the idea to use the hole in the middle as a “shot” and add dulce de leche, and top it with  mascarpone cheese and toasted almonds. Seriously, it turned out AMAZING!! We couldn’t stop eating them!!  You are probably thinking that it would be too sweet with dulce de leche and pumpkin together, right?! We thought about that too, so we mixed the mascarpone with the dulce de leche and it became the perfect combination. (We made these again last night in a regular muffin tin and when they were done you couldn’t see the dulce de leite in the middle of the muffin! Major Bummer!!)

BRAZILIAN FLAIR DULCE DE LECHE PUMPKIN BUNDT CAKE SHOT

 

DULCE DE LECHE PUMPKIN CAKE SHOT
 
Ingredients
  • 1¾ c. all purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1½ tsp. cinnamon
  • ¼ tsp. ground cloves
  • ¼ tsp. mace
  • ¼ tsp. ground nutmeg
  • ½ tsp. ground allspice
  • ½ c. dark brown sugar
  • 2 eggs
  • 1 c. pumpkin puree (fresh or canned)
  • ½ c. canola oil
  • ⅓ c. half n half
  • 1 tsp. vanilla extract
  • 2-8 oz. containers mascarpone cheese
  • 1- 13.4 oz. container dulce de leche
Instructions
  1. CAKE BUNDT
  2. Preheat oven to 425F.
  3. Spray a 6 bundt muffin tin with pan spray and set aside.
  4. In a KitchenAid mixer bowl add flour, baking powder, baking soda, salt, cinnamon, cloves, mace, nutmeg, and allspice.
  5. Set aside.
  6. In a medium bowl whisk together brown sugar eggs, pumpkin, oil, half and half and vanilla until well combined.
  7. Add the wet ingredients into the dry and mix together until combined.
  8. FILLING
  9. Mix well until combined 1- 8 oz. container of mascarpone cheese with 1- 13.4 oz. container of dulce de leche.
  10. Mix the mascarpone with dulce de leche until combined.
  11. Spoon pumpkin batter ⅓ full into muffin tins.
  12. Add 1 heaping T. of the dulce de leche filling on top.
  13. Using a skewer, spread the dulce de leche around the batter.
  14. Spoon the rest of the pumpkin batter on top divided evenly to a little above the tins.
  15. Be careful not to overfill the bundt pan.
  16. If you do (from experience lol) the batter will spill over and you will lose some of that delicious dulce de leche filling!
  17. Reserve remaining dulce de leche filling.
  18. Bake at 425F. for 20-25 minutes or until a toothpick inserted comes out clean.
  19. Cool on a rack for 30 minutes.
  20. Turn out bundt cakes.
  21. Fill holes with remaining dulce de leche.
  22. If you slightly heat up the filling, it will be easier to spoon into the bundt cake!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
