BRAZILIAN FLAIR CHIA SEED JELLO PUDDING

This Brazilian Flair with chia seed Jello pudding is a healthy and guilt free way to cure your sweet craving any time of day.  With sugar free jello, coconut milk and chia seeds, it’s a delicious and satisfying dessert that everyone will enjoy !

BRAZILIAN FLAIR CHIA SEED JELLO PUDDING

We decided to post one healthy recipe a week and this one was so simple and delicious!  Ludmilla and I ate every one of these within a couple of days, and I’m craving more of it!  To make this recipe even healthier, you could use low fat coconut milk and the sugar free sweetener of your choice and it would honestly be totally guilt free! You could also use any flavor of jello you like to mix up the flavors.  It’s super light for summer and a refreshing way to stay cool!

BRAZILIAN FLAIR CHIA SEED JELLO PUDDING
 
Ingredients
  • 1 pkg. (.6 oz) sugar free jello, lime flavored (or you favorite flavor)
  • 2 c. coconut milk
  • ½ c. chia seeds
  • ½ tsp. fiori di sicilia (optional)
  • ¼ c. maple syrup
  • ¼ tsp. cinnamon
  • toasted coconut flakes
Instructions
  1. Prepare jello per the directions on the package
  2. Pour jello into a glass and set sideways in the refrigerator to gel overnight.
  3. Combine coconut milk, chia seeds, fiori di sicilia, maple syrup and cinnamon and mix well.
  4. Pour into the glass over the jello.
  5. Let set overnight.
  6. Top with toasted coconut flakes.
  7. Enjoy!

    Love the jello part! Very creative and beautiful 🙂 I make chia puddings pretty often but haven’t tried making any with jello!

      We’re made chia puddings before also, and This is our First time using the jello with it and We loved it!!!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
