Brazilian flair banana bread with peanut butter cream cheese filling and brigadeiro sauce is your new take on the classic banana bread.

Ludmilla and I are both big fans of banana bread! We just love it! It is so delicious in the morning for a light breakfast with our coffee, or in the afternoon as a light snack with a cup of tea. It’s so versatile! We had a ton of ripe bananas in our freezer to use and we wanted to make a little different type of banana bread and this is what we came up with. Bananas are the only fruit that we don’t mind being overripe. So when my bananas were past the eating stage I knew I was going to give this bread a try. It turned out amazing!! It was so moist and the filling in the middle of the bread gave it that creamy peanut butter and cream cheese flavor that was perfect. On top we drizzled brigadeiro sauce to complete the perfect combination: banana, peanut butter and chocolate.You’ll be sure to find a new favorite banana bread with this recipe and add it to your banana bread collection. Because everyone has one, right?! πŸ™‚

We had to make this cake twice, not because it’s hard but Β the peanut butter cream cheese filling can be tricky. We used the toothpick method to see if the cake was done, and it came out wet after 45 minutes in the oven. So, we cooked the banana bread for 10 minutes more and it was still “wet”. We knew it that was impossible! Then, we realized that it was the filling. You will need about 45 minutes to have this bread cooked perfectly!!

BRAZILIAN FLAIR BANANA BREAD WITH PEANUT BUTTER FILLING
 
Ingredients
  • For the bread
  • 1 c. Sugar
  • ½ c. Butter, softened
  • 2 eggs
  • 3 ripe, mashed bananas
  • 1 tsp salt
  • 1 tsp baking soda
  • 3 T. Sour cream
  • 2 c. All purpose flour
  • For the filling
  • 4 oz. cream cheese
  • 4 oz. creamy peanut butter
  • ½ c. Sugar
  • 1 egg
  • 1 T. Flour
  • Brigadeiro Sauce
  • I cutted the brigadeiro recipe in half. I added ½ can of table cream to make the brigadeiro more "sauce".
Instructions
  1. Preheat oven to 350F.
  2. For the bread
  3. Grease and flour a loaf pan and set aside.
  4. In a kitchenaid mixer combine the sugar, butter and eggs and mix until well combined.
  5. In a separate bowl combine sour cream and baking soda until dissolved.
  6. Add the sour cream/baking soda, salt and mashed bananas to the creamed mixture.
  7. Mix until well combined.
  8. Add in the flour and mix until just combined. Set aside.
  9. For the filling
  10. In a separate bowl mix together the cream cheese, peanut butter, sugar, egg and flour.
  11. Mix well until creamy and combined.
  12. In the loaf pan place half of the bread batter down.
  13. Spread the filling down the middle of the batter and spread to cover.
  14. Cover the filling with the remaining batter.
  15. Bake for 45 minutes or until a toothpick inserted comes out semi dry. There will still be some moisture in middle of the bread from the filling.
  16. Let cool for 10 minutes before removing from the pan.

Brazi Bites JalapeΓ±o Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. JalapeΓ±os

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeΓ±os and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeΓ±os and small dice.

In a medium bowl mix diced jalapeΓ±os, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeΓ±o mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
