BLUEBERRY CRUMB BARS

SERIOUSLY!! WE HAVE THE BEST NEIGHBORS!!. A couple of days ago our neighbors surprised us by bringing over a TON of fresh blueberries from their yard!  I was so surprised and so happy!! As you know we post so many fruit recipes because I LOVE THEM!  So, I really wanted to make something special for them to say Thank You!  I wanted a combination of a breakfast/dessert bar and had a great idea.  I  used a combination of a dessert bar and added flax seeds and chia seeds to make it something a little different.  It’s sweet, super fresh and with a little health benefit added to it!  Try to use fresh blueberries because the flavor is amazing, but you could probably use raspberries, strawberries…whatever.  You could have these blueberry crumb bars with coffee in the morning or as an afternoon sweet snack!  Summer is almost over so get to it!!!

BLUEBERRY CRUMB BARS

Ingredients:

1 c. sugar

1 1/2 tsp. baking powder

3 c. all purpose flour

4 T. flax seeds

2 T. chia seeds

1 c. cold, unsalted butter, cut into pieces

1 egg

1/4 tsp. salt

zest and juice of 1 lemon

5 c. fresh blueberries

1/2 c. sugar

5 tsp. cornstarch

BLUEBERRY CRUMB BARS

Directions:

Preheat oven to 375F.  Grease a 9×13 pan with nonstick spray.

In a medium bowl whisk together 1 c. sugar, 3 c. flour, baking powder, flax seeds and chia seeds.  Mix in salt and lemon zest.

With a pastry cutter blend in the butter and egg until pea sized pieces.  Press half of the mixture into the prepared pan.

In a separate bowl mix together 1/2 c. sugar, cornstarch and lemon juice.  Gently combine with the blueberries until just coated.  Pour blueberry mixture over the crust and sprinkle remaining dough mixture over the top.

Bake in preheated oven for 50-55 minutes until top is slightly browned.  Cool and cut into bars.

Serve with coffee, ice cream or whipped cream.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
