BLACKBERRY BREAKFAST CEREAL BARS

The other day I was walking with my kids (Chloe and Cody ! lol) when I finally saw the blackberries that my neighbor Sylvia told us about. It’s unbelievable how sometimes I walk like a horse = not looking around. I was so surprised to see how many blackberry bushes there were and I never noticed them. The next day I went again for a walk with them and decided to stop and grab some of it for Marilyn to make something with this delicious fruit. She decided to make blackberry breakfast cereal bars.

Ingredients:

2 cups blackberries
2 tablespoons sugar
2 tablespoons water
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1 cup flour
1 cup quick-cooking rolled oats
2/3 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon baking soda
1/2 cup margarine or 1/2 cup butter, melted

Directions:

For filling, in a medium saucepan combine berries, sugar, water, lemon juice and 1/2 teaspoon cinnamon. Bring to a boil. Reduce heat. Simmer, uncovered, for about 8 minutes or till slightly thickened, stirring frequently. Remove from heat.

In a mixing bowl stir together flour, oats, brown sugar, 1/4 teaspoon cinnamon, and baking soda. Stir in melted margarine till thoroughly combined. Set aside 1 cup of the oat mixture for topping. Press remaining oat mixture into an ungreased 9x9x2″ pan. Bake in a 350 oven for 20-25 minutes.

Carefully spread filling on top of baked crust. Sprinkle with reserved oat mixture. Lightly press oat mixture into filling.

Bake in the 350 oven for 20-25 minutes more or until the  topping browns. Cool in pan on a wire rack. Cut into bars. You will notice a huge difference eating this homemade bars!

It is easy, quick and an healthy snack!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
