BAKED “BACON” SHIITAKE MUSHROOMS

Baked “bacon” shiitake mushrooms are crispy, healthy and delicious. We have been eating them as a snack, on salads, pasta and over crostini. You can choose your own way to add this yummy ingredient to any meal and I guarantee you won’t regret it.

BAKED-'BACON'-SHIITAKE-MUSHROOMS

We eat a lot of Portobello mushrooms at our house. My favorite is the Balsamic Portobello Mushroom.  When Marilyn made it for me for the first time, immediately I fell in love with it and it became one of my favorite recipes. We made a portobello mushroom stuffed with quinoa that I love and the last recipe we made using portobello mushrooms was the one stuffed with yuca that was amazing.

Now our new obsession is the shiitake, another “meaty” mushroom. I ate these by themselves as a snack.  It was so good that later on I made a spinach salad that I usually add bacon to, but added the baked “bacon” shiitake mushroom instead and I didn’t miss the real bacon. Since they are very nutritional they make a great meat substitute. They are a healthy alternative to meat for people trying to cut back on fat or even for those who want to have a balanced and healthy meal in general.

I said here before that I love Cup of Jo, Joanna Goddard’s blog. She wrote a post about Modern Love that I love so much. They have a podcast now with the two first episodes and I can’t wait to hear it. “Each episode will feature a reading by familiar voices, including Judd Apatow, Sarah Paulson, Michael Shannon and January Jones, followed by a conversation led by the host, Meghna Chakrabarti, with the essayist and me about what’s happened since and how the writer feels about the story now”. That’s awesome!!

BAKED “BACON” SHIITAKE MUSHROOMS
 
Ingredients
  • 1 pound of shiitake mushrooms (trimmed and sliced)
  • 1 tablespoon sea salt
  • ½ teaspoon black pepper
  • ½ cup oil
Instructions
  1. Preheat the oven 375F.
  2. On a baking sheet toss mushrooms with salt, pepper and olive oil.
  3. Baked for 30 minutes or until browned and crispy.
  4. While the mushrooms are baking, keeping tossing them with with tongs or a spoon to bake evenly.

    This looks amazing! I’m always looking for a dish that can be used on a table full of finger foods. I would imagine these go great with the wine wine your paired with it.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
