AVOCADO AND GARBANZO BEANS SALAD

Last week I was in charge of making dinner every night and it was quite a challenge to leave my comfort zone (real Brazilian food) and try to make something else. We are trying to be carbohydrate free for one month!! (tears rolling down my face) and I can say we are 95% there!! lol And I’ll tell you why… Last week our favorite neighbors (Kathy and Al) gave us the BEST homemade caramel corn we’ve ever tasted. I couldn’t resist it!! But that’s ok! I don’t believe and don’t want radicalism in my life anymore… it’s all about balance. So, I came out with this avocado and garbanzo beans salad that’s a mix of the things I like and a couple new things we recently added to our routine: chia seeds and spicy roasted garbanzo beans.

AVOCADO AND GARBANZO BEANS SALAD

Ingredients

Mix of mixed greens: spinach and arugula
1 mango
1 avocado
1 lime, juiced
Chia seeds
Spicy roasted garbanzo beens

AVOCADO AND GARBANZO BEANS SALAD

Spicy orange vinaigrette

2 tbs champagne vinegar
6 tbs orange juice
4 tbs lime juice
2 tbs finely chopped basil
Salt and pepper
1 tbs honey
4 tbs olive oil
½ tsp cumin
1 hot pepper, sliced (I used Brazilian pepper- malagueta)

Salt and pepper

Instructions

Combine all the ingredients for the salad dressing until the ingredients are mixed. I like to make the salad dressing way before the salad and let it rest to to be more flavorful. You can adjust the ingredients for the dressing as you like. For example, I love sweet dressings, my dressings are always more on the sweet side.

Toss the mixed greens with the salad dressing.

Put on the plate and add  the mango and avocado.

Drizzle the dressing on top, sprinkle chia seeds and the spicy roasted garbanzo beans. In this case the garbanzo beans worked like croutons, it gave that crunchiness that sometimes we miss in salads.

Use whatever you like or have in your house. It is a beautiful salad and very flavorful. We have video on our Instagram.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
